The Vegan Dinner Series showcases rotating five-course menus—curated by Executive Chef Abril Callender and Ciclo Restaurant Chef Juan Mateo— that reinterpret familiar dishes through a seasonal, plant-forward lens. With a focus on locally sourced ingredients, each dinner celebrates the region’s purveyors while offering a fresh, flavourful perspective on modern dining in Texas.
